Newbie question - How do I create a totally blank homepage.

Do I have to go into homepage and unhook all the modules ?

I dont understand what you mean. If you use the "Hello" theme you have a light theme.
And you start vom scratch with a "New Page"
Put all you need into the new page and store the page.
Go to "Customizer" , "Homepage Settings", static page, use your new page and the you see this page as the Startpage
